  7. Remove the pork medallions from the pan and place them on a plate.
  8. Rep with the remaining medallions; remove the second batch of pork from the skillet and put it aside.
  9. Return the skillet to the heat and carefully pour in the chicken broth, being cautious of the smoke.
  10. Continue to fry for 1 minute over medium-high heat, whisking to scrape up all the browned pieces from the bottom of the pan.
  11. Add a couple of pats of butter and gently swirl to melt; you only need enough butter to slightly thicken the sauce.
  12. Return the medallions to the skillet and heat through, spooning the sauce over the medallions.
