How To Make Easy Pork Loin Roast cooked with the most incredible Honey Garlic Butter Sauce! Oven and slow cooker methods included for an easy dinner idea.

This Pork Loin recipe is simple to throw together and impressive enough to feed your guests. Whether you choose a crock pot OR your oven, this ‘no-stress’ recipe will give you the most incredible roast ready and on the table in no time!

Inspired by our amazingHoney Garlic Butter Pork Chops, our pork loin recipe is another easy dinner recipe to rock your world.

Pork Loin Roast Recipe (1)

PORK LOIN RECIPE

Skinless and boneless pork loin NEEDS a good sauce, being that itis a lean cut of meat. Cooking it in a deep flavouredHoney Garlic Butter Sauce is PERFECT and gives you the ideal sauce to serve it with!

Apart from the tender pork meat, the sauce is truly memorable — a dinner that you will be thinking about long after leftovers have disappeared.

Make sure you get a good quality cut of Pork Loin for this recipe. Not to be confused with pork tenderloin, pork loinis a thicker and wider cut usually found with a fatty layer on top. Pork Tenderloin is long and a lot thinner (see this recipe here for reference).

HOW LONG DO YOU COOK A PORK LOIN ROAST

This pork loin recipe needs three steps before giving you an incredible tasting pork:

  • SEASON: Seasoned in a delicious rub with paprika, garlic powder, onion powder, optional red chili powder and brown sugar for caramelization. Pat meat dry with paper towel first so that the seasoning sticks and absorbs better.
  • SEAR:Where theDEEP flavour begins.
  • COOK!

Pork Loin Roast Recipe (3)

Slow cooking pork loin in a crock pot at a low temperature is perfect and isn’t going to dry out or ruin your pork.

2 pounds (1 kg): 3 1/2 hours on low
3-5 pounds (1 1/2 – 2 1/2 kg): 4-5 hours on low
6 pounds (3kg): 6 hours on low

Oven roastpork loincovered for the first half hour which results in steaming/braising the meat. Then roast uncovered to get some beautiful charred/caramelized edges thanks to the brown sugar in the rub and the honey in the sauce.

SAUCE

Made with mouthwatering pan juices left in the slow cooker or baking pan when its done. This pork recipe creates its own stock while cooking, mixing through the honey garlic sauce to create some magnificent flavours.

Honey, unsalted butter, low sodium soy sauce, rice wine vinegar (or cider vinegar), and a good kick of garlic is all you need. I use low sodium to control the end result.

This recipe makes SO MUCH SAUCE to drizzle all over rice, noodles, veggies and potatoes.

WHAT INTERNAL TEMPERATURE SHOULD PORK LOIN BE COOKED?

The National Pork Board recommends cooking pork loin, chops, roasts and tenderloin to an internal temperature of 145° F (62°C), followed by a 15-minute rest.

Pork Loin Roast Recipe (5)

HOW TO MAKE PORK LOIN AHEAD OF TIME

Pork and sauce can be prepared up to 1 day ahead:

  • Pour sauce over seared/browned pork (store in your slow cooker bowl, baking pan or a large, shallow dish).
  • Cover and refrigerate for up to 12 hours.
  • If preparing more than 12 hours ahead, keep the sauce in separate dish.
  • Slow cook or roast as per recipe.

LEFTOVERS

Refrigerate with the sauce for up to 3 days, or freeze for 3 months. The sauce soaks through the pork while stored and tastes even better the next day!

Serves: 8 serves

Ingredients

PORK LOIN:

  • 4-5 pound (2-2.5 kg) pork loin roast, trimmed of skin and fat
  • 1 1/2 tablespoons olive oil, divided

RUB:

  • 2 teaspoons paprika (mild or smoked)
  • 1 teaspoon brown sugar
  • 1 teaspoon each garlic powder and onion powder
  • 1/2-1 teaspoon red chili powder, (optional)
  • 2 teaspoons coarse salt
  • 1/2 teaspoon black cracked pepper

HONEY GARLIC BUTTER SAUCE:

  • 1/2 cup (125 g | 4-oz) honey
  • 1/2 cup (125 g | 4-oz) unsalted butter
  • 6 cloves garlic, finely chppped or minced
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons rice wine vinegar, (or cider vinegar)
  • Good pinch of salt
  • 1/2 teaspoon cracked black pepper

ADDITIONAL:

  • 1/2 cup low sodium beef or chicken stock/broth, (FOR OVEN METHOD ONLY)
  • 1/2 cup water (FOR OVEN METHOD ONLY)
  • 4 teaspoons cornstarch (cornflour)

Instructions

PORK LOIN:

  • Pat dry pork with paper towel. Combine 1 tablespoon of oil with rub ingredients. Season pork, rubbing the mixture into the meat.

  • Heat remaining oil (about 2 teaspoons) in a large pan or skillet over medium heat. Sear pork all over until golden browned, rotating the pork around to avoid spices burning.

SAUCE:

  • Melt butter in the same pan the pork was in while scraping up any leftover bits in the pan. Add garlic and sauté for 1 minute until fragrant. Stir in remaining sauce ingredients; bring to a rapid simmer for 1 minute.

SLOW COOK:

  • Place seared pork in a 6-qt (litre) slow cooker. Pour sauce over pork; cover with lid and cook on LOW heat setting for 4 - 5 hours.

  • Transfer pork onto serving dish and tent loosely with foil. Let rest for 10-15 minutes.

  • While pork is resting: pour juices from the slow cooker bowl into a pot large enough to fit the liquid. Bring to a simmer over medium-high heat.

  • Mix 2 tablespoons of the juices with 4 teaspoons of cornstarch (cornflour). Whisk cornstach slurry into sauce and let simmer for a good 5 minutes, or until thickend into a syrup-like consistency.

(For a thicker sauce, repeat this step with 1 teaspoon cornstarch mixed with 2 teaspoons water. Add into sauce and cook until thickened (please note: saucewill thicken as it cools). Continue this step until reaching your desired consistency.)

  • Slice pork and serve drizzled with Honey Garlic Butter Sauce.

OVEN ROAST:

  • Preheat oven to 350°F (175°C).

  • Place seared/browned seasoned pork in a roasting pan.

  • Prepare sauce, as above. Reserve 1/2 cup sauce for basting. Pour remaining sauce over pork.

  • Pour 1/2 cup stock and 1/2 cup water around the pork.

  • Cover and roast for 20 minutes. Baste with half of the reserved sauce and continue roasting, uncovered, for a further 15 minutes.

Baste again and roast for a further 10-15 minutes, or until a meat thermometer registers 145°F (62.5°C) in the thickest part.

(If pan dries out while cooking (it shouldn't), add a little more water.)

  • Transfer pork onto serving plate and baste with pan juices. Tent loosely with foil and let rest for 10-15 minutes..

  • Scrape up any browned bits leftover in the pan, mixing them through the pan juices and pour juices into a pot. Whisk cornstarch into an additional 1/2 cup water, whisk cornstarch slurry into the sauce and bring to a simmer. Slowly add in 1/4 cup - 1/2 cup additional, if needed, until reaching a honey-like consistency. (Please note: saucewill thicken as it cools).

  • Slice pork and drizzle with Honey Garlic Butter Sauce.

Notes

Use skinless, boneless pork, trimmed of excess fat to avoid fat melting into our braising liquid/sauce.

Very good recipe. The only issue I had was the cooking time was much shorter in my case probably due to the crockpot I find this method destroys food but it just might be my pot. After 3 1/2 hours my 3.5 lb pork loin was over 200* double checked the temp setting being “low”. Roast was still good still good. Served with garlic smashed red potatoes. The crockpot is not my friend.

Broke the #1 rule of having guests over- don’t try a new recipe. Just don’t. Well I did, and it was fab! Had to switch up some ingredients, like maple syrup instead of honey, balsamic instead of cider vinegar, and red wine, because wine. Soooooooo good! I’m always nervous about drying out pork loin. This was most, and the sauce was dee- licious! Can’t wait to make it again.

I made this with a 3.3 lb pork loin but used the same amount of ingredients as the 4-5 lb recipe so there was plenty of sauce (I’m a big sauce person). The oven cook times were still accurate. The pork was so juicy and tender and the sauce was amazing over it, rice, and sautéed mushrooms and spinach. I wouldn’t change a thing! My wife and I loved it! Thank you so much!

I’m one for not using a lot of pans so I made this all in a cast iron skillet. I didn’t quite understand the oven directions so I winged it and it came out great. There was still a lot of liquid when the roast came out of the oven. I just pulled the roast off and tented it. Cooked the liquid left in the skillet and added a small amount of cornstarch and water slurry to it. The roast came out perfect. And the sauce was very tasty. Will definitely make this again.

I never leave comments on on-line recipes, but I had to for this one. I have three kids. One is, I believe, the world’s pickiest eater. I made this recipe, as described, and it was DELICIOUS. ALL THREE kids ate it! My picky eater said, “I don’t exactly like it, but it’s not terrible.” Which is literally the best thing he’s said about food that wasn’t a dino chicken nugget in years. And he ate all four bites I put on his plate. Amazing! I highly recommend this recipe and will definitely be making it again in a larger quantity!

    Great recipe!
The rub was perfect. I cooked the roast in a Dutch oven. I adjusted the sauce a bit, eliminating the butter (too rich for me), reduced the honey to a hefty squeeze and left out the soy sauce (accidental!) and used ACV instead of rice vinegar. Since I roasted it with the top on I didn’t bother reserving liquid for basting, just put it all in. I also added a huge bunch of collard greens in the dutch oven and it came out so good! My mouth is watering just thinking of it. I also didn’t thicken the sauce, it was really good as is!

Cooked this up for lunch today. My husband claimed the whole roast for himself after tasting it. I made him share with everyone in our household. Everyone loved it. I left the chili pepper out, along with the corn starch and stock broth. My mind registered these as optional not Additional. It came out soft, moist, tender and delicious.

I just finished putting it in the slow cooker and accidentally put in the 1/2 cup of stock in the sauce. I didn’t put it the water or cornstarch because I figured out my mistake just as I had thrown in the stock. I’m guessing it won’t hurt too much but I’m bummed I didn’t get it right for my first try with this recipe after reading all the glowing reviews. The smell of the sauce alone has me itching for dinner time!!

I never comment on recipes, but I had to make an exception with this one. I haven’t made a pork loin in years because I was never a fan of them growing up. Your recipe has changed that for me. After looking at a few recipes online, I chose this one because of its 5-star ratings and because it made a lot of sauce – something that appealed to me (I love sauces on almost everything lol). The sauce was fantastic and most importantly, my husband loved it. He loves pork loin, and I’m happy to find a recipe for it that we can both enjoy. He will never eat pork as leftovers, but he said he was going to have the leftovers for lunch tomorrow – a first for him! Thank you -I look forward to trying more of your recipes.

Made this yesterday for a holiday gathering and everyone loved it!! I used only half smoked paprika cause I’m not a huge fan of the smoke flavor and half regular Spanish paprika. I had tenderloins in the fridge, so used them in the slow cooker. Substituted red pepper flakes for chili powder at the lower amount which added a great kick but not too much. Took only a few hours in the cooker on high and the sauce was wonderful.

This was a fantastic roast dinner considering it wasn’t tenderloin. I only had half the roast size so I cut back on the rub but probably should have kept it the same.
I had a serious brain-fart moment and blended both the sauce mix and the additional liquids and corn starch all at the same time, so the various bastings were directly from the pan.
My wife said it was the best pork roast we’ve had in a long time .. I agreed.

I was unsure about the honey (normally don’t care for sweet meat), but trusted you and it was delicious! I also have to tell you I have never tried anything from your website that wasn’t absolutely delicious.

I have tried many different recipes from different blogs – but this is the first time I have ever written a comment. This is SO good, I had to leave a comment. I left out the chili powder (not our favorite spice). The pork was so tender (was like eating a pork tenderloin) and flavorful. I cooked mine in the oven, after the 2nd basting, I put my meat thermometer in, it was perfect. I can’t wait to cook it again.Thank you so much for sharing it.

Wondering if anyone has tried using a bit of apple juice instead of water in the oven roasting method? Love the flavor of apple with pork and thinking it might go well here.

I only have tenderloins in my freezer , will it make a difference if I use those in place of the loin ? I prefer them as they are much more tender .

I’m going to guess that tenderloins will work, but adjust your cooking times as they are smaller and will cook faster. This sauce may make them mushy though? Because they are sooo tender to begin with. Let us know?

Amazing! Used a 3 lb loin and slow cooked for 3 hours…temped it a little early and it was perfect. Didn’t dry out like I thought it might in the slowcooker, and not a bit left over. Will be a regular in future meal plans…just like the pork chops are. Thank you for all the great tips and recipes.

Never did a pork loin in the slow cooker before. This turned out great (although next time we will pre-sear the loin a little more than we did……I guess we were afraid of over cooking. Just go ahead and give this a really good sear).

The sauce was OUTRAGEOUSLY GOOD. Definitely a keeper!

What is the best cooking method for loin? ›

CG: Roasting is the most natural way to cook a pork loin, and it's the easiest and the quickest to get into the oven. I like to sear the outside and then roast it, or you can just roast it as is. The indirect method of cooking preserves pork loin's inherent juiciness and tenderness.

What temperature should a pork loin roast be cooked at? ›

A good rule of thumb is to cook pork loin 25 minutes per pound at 350 degrees F (177 degrees C). The internal temperature should be at least 145 degrees F (63 degrees C), so use a thermometer to know when it's done. You'll want to let your pork loin rest at least three minutes before serving.

Is it better to cook a pork loin at 350 or 400? ›

This is the cardinal rule for lean cuts of meat like pork tenderloin. At 400 degrees F, a 1-pound pork tenderloin will cook in 8 to 10 minutes after being seared on the stove.

Do you add water when cooking pork loin? ›

Place the unpackaged pork roast inside of your slow cooker and set the temperature to low. Pour about a half cup of water around the pork — make sure the bottom of your slow cooker is covered. Place lid on and cook on low for about two hours or until your pork reaches an internal temperature of 145 degrees Fahrenheit.

Does pork loin get more tender the longer you cook it? ›

So this depends on the cut, and how much connective tissue it has. If you're cooking pork tenderloin, time doesn't matter much. If you're cooking the tougher cuts, you can benefit from longer cooking times for increased tenderness.

Should I put water in the pan of a pork roast? ›

Place pork roast (fat side up) into large roasting pan with 1 cup water in the bottom. Bake for 4-5 hours or until desired tenderness. (I typically go 5 hours for pull apart pork roast) Add water as needed during cook time to prevent burning on the bottom of pan.

Should you sear pork loin before roasting? ›

Pork tenderloin is really a weeknight all-star. It's food-budget-friendly, it's always ready to feed a hungry crowd, and, most importantly, it's super easy to make. The key is to remember this little two-step process — sear and roast — which results in a piece of meat that's moist and juicy.

What is the difference between pork loin and pork loin roast? ›

Pork loin describes a cut of meat, while pork roast is all about the size. You can buy several different types of pork loin roasts, all of which provide protein, B vitamins and zinc.

Should you bake a pork roast covered or uncovered? ›

Tenting can be suitable for some cuts of meat, but if you want a crunchy crust on your roast, then it's best to leave it uncovered. If you notice that the roasted pork is browning too much, you can lightly cover it with aluminum foil. However, do not cover it for the last 5-10 minutes in the oven.

What temp is pork loin most tender? ›

It turns out that 145° is a safe internal temperature and will give you a much juicier, more tender piece of meat (note that ground pork should still be cooked to 160°).

How long to cook a 2 pound pork tenderloin in oven at 350? ›

How long to cook pork tenderloin in oven at 350? Cooking pork tenderloin in the oven at 350°F typically takes about 25-30 minutes per pound.

How long to cook a 1 lb pork tenderloin at 350 degrees? ›

Safe internal temperature: The recommended safe internal temperature for cooked pork loin is 145°F (63°C). Cook time estimate: A good rule of thumb is to cook pork loin at 350°F for 20-25 minutes per pound.

How long should you cook a pork loin at 400? ›

Preheat the oven to 400 degrees F. Drizzle the oil over the pork and sprinkle liberally with salt and pepper. Transfer the pork to a rack over a heavy-bottomed roasting pan. Roast the pork until a meat thermometer inserted into the thickest part of the loin reads 140 degrees F, about 1 hour.

How do you know when a pork loin is done cooking? ›

Another good tip is to keep an eye on the juices of the meat as you're preparing it. If the liquid is clear, the meat is probably fully cooked. A little pinkness to the pork will leave the meat juicy and tender, as long as it has hit that ideal 145 degrees Fahrenheit.

How do you keep pork moist and tender? ›

Brining pork chops is one of the best ways way to guarantee a juicy cooked pork chop. Even a quick 30-minute brine (or up to four hours) makes a big difference. It's not strictly necessary — you can still use this method to make great pork chops even without brining — but if you have some extra time, I recommend it.

Should pork tenderloin be cooked fast or slow? ›

The size and structure of a tenderloin make it perfect for cooking quickly on high heat. You want to be able to brown the outside while still keeping it a little pink on the inside.

Should pork roast be cooked fast or slow? ›

Low and slow is always the go for a tender pork roast. Depending on the size of the roast and the type of slow cooker, a pork roast is best cooked on LOW for 6-8 hours. If you prefer an oven method, a typical roast will take 3-4 hours in a low (160°C) oven.
