These Polish Apple Pancakes are made with apples that are dipped into pancake batter, then fried and topped with powdered sugar or a sweet syrup!

Pancakes for breakfast is always a great idea! I would have pancakes every morning if I could for the rest of my life, especially when the pancakes are so special just like these apple pancakes. They’re so quick and easy to make, and absolutely delicious!

You should also try my vegan coconut pancakes with caramelized bananas, and classic chocolate chip pancakes!

POLISH APPLE PANCAKES

This is my Mum’s recipe, it reminds me of my childhood and we still make it quite often. We usually add apples, but when we have a lot of pears we just add them to the pancakes. Peaches also work great when they’re not too juicy.

I don’t know Polish but someone told me that this recipe is called “racuchy z jabłkami”. It’s a traditional Polish recipe, where apples are dipped in pancake batter and fried!

What I really love about these pancakes is that they’re crispy on the outside, sweet, and fluffy on the inside.

Traditional polish apple pancakes

Traditional polish apple pancakes

Ingredients

  • 1 cup (120 grams) all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup (240 ml) whole milk or 2%
  • 1 teaspoon vegetable oil
  • 5 (5) apples peeled and thinly sliced or shredded
  • Powdered sugar for serving

Instructions

  • In a bowl, combine flour, sugar, baking powder and salt.

  • In another bowl, lightly beat the egg then add milk and oil. Add to dry ingredients and stir until smooth. Fold in the apples.

  • Pour batter using a ½ cup onto a lightly greased hot pan and spread to form a 5 inch circle. Turn when bubbles form. Cook the second side until golden brown and apples are tender. Sprinkle with powdered sugar if desired.

Notes:

  • The apples must be cut into thin slices, and grated apples work too.
  • You can substitute apples with pears or peaches.

    delicious. only thing is for me is I thought it was time consuming. I also used a 1/4 cup instead of the 1/2 cup for the cooking process. over it was delicious. my hubby’s father was polish so I thought it would be a treat. he didn’t grow up with eating polish food.

    Diana, thank you for sharing your recipe with us. I made these polish apple pancakes this morning and just like Teresa’s comment below, after the initial golden brown on both aides, the pancakes were still very wet inside. They took a long time to cook through. I think 5 shredded apples was way too much for 1 cup of flour. I looked for this recipe online and all of them suggested 1 to 1 1/2 size apples for the same amount of flour. I haven’t giving up on this recipe, I’m sure is delicious with the proper amounts. But thank you very much for inspiring me to make this recipe. I’ll try it next time with 1 1/2 apples.
